INGREDIENTS

What you need.

  • 3 cupsteff flour
  • about 4 cups, dividedwater
  • 1 tspsalt
  • for the pan, if neededneutral oil
Ingredient amounts scaled to 1×. Cooking time and pan size may not scale linearly.
METHOD

How to make it.

  1. 1Whisk teff flour with enough water to make a loose batter.
  2. 2Cover loosely and ferment at room temperature until tangy and active, typically 2–3 days depending on temperature.
  3. 3Stir, adjust with water to a pourable crepe-like consistency, and season lightly with salt.
  4. 4Pour onto a hot nonstick or traditional injera surface in a spiral; cover once bubbles form.
  5. 5Cook without flipping until the top is set, then cool on a cloth before stacking.
VARIATION

Households differ.

Teff percentage, fermentation time and batter technique vary widely. Some households blend teff with other grains; 100% teff is not universal.
